VINEYARDS:
Planted on medium fertile soils-some on piedmont slopes-in the coastal sector of the Maipo Valley, the vineyards benefit from the cooling influences of Lake Rapel and coastal breezes. Rigorous vine management and minimal irrigation ensure highly concentrated fruit. The grapes ripen very slowly and were hand-picked at the optimum degree of maturity in late April.
VINIFICATION AND AGEING:
Following a normal crush, the must for this rosé was bled off, decanted with enzymes for 24 hours, and racked to temperature-controlled stainless steel tanks at around 100 NTU. It was then inoculated with yeast for white wine and allowed to ferment at 12-15ºC (54°-59°F) to preserve the natural fresh fruit aromas.
TASTING NOTES:
Bright red with fresh, intense aromas of grapefruit and red fruit with a soft floral hint. Bright acidity balances perfectly with its residual sugar for a fresh, complex wine with a beautiful finish. This wine can be enjoyed at any time of the day, but is particularly recommended as an aperitif with nuts and cheeses, fresh shellfish, and salads.
